This plant, much like the rooibos, was only known to indigenous people; in this case it was the Khoisan of the South African Cape. They used the herb medicinally to treat coughs and upper respiratory infections. Even today, the only populations in existence of this plant are those same natural fields. This makes processing longer than it would in cultivated fields. To begin harvesting, the bushes are cut to the ground; this promotes future harvesting and makes the stems grow softer and the leaves more abundant. The collected plants are then brought to factories where they are chopped; this begins the fermenting process.

After being chopped, the honeybush tea is cured by using a baking oven or a curing heap. A curing heap is basically a large pile of the chopped honeybush plant which is covered and left to heat for days. It produces its own heat and fermentation making the leaves turn from green to dark brown. The pile is tossed at specific intervals to release oxygen and equalize the temperatures.

Once the honeybush has reached full fermentation it is spread out in a thin layer and left in the sun to dry. This process, as opposed to the ovens, creates more variety in flavor and quality due to the limited control over the temperature and fermentation. After drying, the end product is rotated through a sieve and all material bigger than a matchstick is removed.

High levels of anti-oxidants, minerals and rare trace elements are present in this special herb. It has been proven to aid in sleep and digestive disorders, alleviate menopausal symptoms, and repair sun damage. It is also free of caffeine and low in tannins which makes this a healthy choice for children, pregnant women, and those sensitive to caffeine or tannins.
