Pu'erh (also known as Pu-erh and Puerh) is often categorized as a black tea but it is really deserves a class of its own as one of the only post-fermented teas. Pu'erh processing is the most unusual of all teas. Oxidized levels remain around that of green tea, but then the leaves are left a little damp and piled one on top of another. The purpose is to create the same bacterial reaction as a compost heap. The leaves are often compressed into tea bricks or tea cakes. Some tea cakes have been placed in caves to induce the earthy flavors pu'erh is known for. Fermented leaves can be aged like this for fifty or more years, resulting in a very strong flavor. Many tea connoisseurs drink pu'erh for the uniqueness and quality. They are willing to pay steep prices for these aged teas.
